Vegan Spelt and Vanilla Cake

This gorgeously soft and fluffy spelt and vanilla sponge cake is a breeze to make, dairy free and requires just 6 ingredients to prepare. Light and moreish, it's a fantastic option for your meal planner.

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Spelt Flour Spelt Flour 300g 2 & 1/2 cups
  • Baking Powder Baking Powder 3 tsp 3 tsp
  • Granulated Sugar Granulated Sugar 180g 7/8 cup
  • Water Water 330ml 1 & 1/3 cups
  • Vegetable Oil Vegetable Oil 90ml 6 tbsp
  • Bourbon Vanilla Powder Bourbon Vanilla Powder 1/2 tsp 1/2 tsp

Instructions

  1. 1.Preheat oven to 180°C.
  2. 2.In a large bowl sieve flour, baking powder and the vanilla bourbon powder and mix well.
  3. 3.Melt the sugar in the water by stirring well then add the vegetable oil.
  4. 4.Pour sugar mixture into the bowl with dry ingredients and whisk gently until batter is smooth.
  5. 5.Line or grease a cake pan and pour the cake batter into it.
  6. 6.Bake for about 45 minutes or until inserted skewer comes out clean.
  7. 7.Allow to cool, dust top with icing/powdered sugar and serve.
