A moist and delicious vegan banana cake infused with cinnamon, vanilla and crunchy almonds!

Ingredients

  • Banana Banana 3 3
  • All Purpose Flour Plain Flour 200g 1 & 2/3 cups
  • Caster Sugar Caster Sugar 90g 6 tbsp
  • Vegetable Oil Vegetable Oil 90ml 6 tbsp
  • Baking Powder Baking Powder 2 tsp 2 tsp
  • Ground Cinnamon Ground Cinnamon 1/2 tsp 1/2 tsp
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Vanilla Extract Vanilla Extract 1 tsp 1 tsp
  • Walnuts Walnuts 35g 1/3 cup
  • Topping:
  • Banana Banana 1 1

Instructions

  1. 1.For the best taste use very ripe bananas.
  2. 2.Preheat the oven to 180C degrees.
  3. 3.Grease a 20 x 20 cm square baking tin with vegetable oil, line with parchment baking paper.
  4. 4.Peel the bananas and finely crush 3 of them with a fork or blend them with a hand blender in a large mixing bowl.
  5. 5.Mix in vegetable oil and vanilla extract, stir until all is well mixed.
  6. 6.Sift the flour, sugar, salt, cinnamon powder and baking powder, add all to the moist mixture, stir loosely.
  7. 7.Pour the mixture into the square baking tin, top it with slices of 1 banana.
  8. 8.Bake for 20 minutes, until a toothpick comes out clean.
  9. 9.Cool for 20 minutes before serving.
