This alternative vegan pasta recipe is high in protein and abundant in vitamin A, potassium and fiber. Paprika, garlic and onion combines with the sweet potato to provide an irresistible flavor in this moreish pasta dish!

Dairy Free High Protein

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Fusilli Pasta Fusilli Pasta 350g 3 & 1/2 cups
  • Sweet Potato Sweet Potato 1 1
  • Yellow Onion Brown Onion 1 1
  • Garlic Garlic 2 cloves 2 cloves
  • Tomato Paste Tomato Paste 1 tbsp 1 tbsp
  • Paprika Paprika 1 tsp 1 tsp
  • Vegetable Stock Vegetable Stock 150ml 3/5 cup
  • Table Salt Table Salt pinch pinch
  • Olive Oil Olive Oil 1 tbsp 1 tbsp

Instructions

  1. 1.Cook pasta according to packet instructions.
  2. 2.Steam sweet potato for 20 mins until soft.
  3. 3.Mince garlic, dice onions and fry in olive oil in a small sauce pan until translucent.
  4. 4.Add tomato paste and stir well, pour in veggies stock and cook for 2 minutes while stirring.
  5. 5.Add sweet potato, ground paprika and vegetable stock mix to a food processor and blend on low speed until smooth (high speed will make your lid pop due to the heat).
  6. 6.Once pasta is al dente, mix sauce together with pasta and enjoy.
