A wonderful dairy free version of the Chaas, a cold drink hugely popular across the Indian subcontinent. The chaas is renowned for its health benefits. Ingredients

  • Raw Cashew Nuts Raw Cashew Nuts 125g 1 cup
  • Unsweetened Almond Milk Unsweetened Almond Milk 125ml 1/2 cup
  • Lemon Lemon 1 1
  • Maple Syrup Maple Syrup 1 tsp 1 tsp
  • Sea Salt Sea Salt pinch pinch
  • Filtered Water Filtered Water 250ml 1 cup
  • Ground Cumin Ground Cumin 1/4 tsp 1/4 tsp
  • Ground Black Pepper Ground Black Pepper pinch pinch

Instructions

  1. 1.Soak cashews in boiling water for 2hrs, drain and rinse.
  2. 2.Make cashew yoghurt by adding cashews, almond milk, juice from one lemon, maple syrup and a pinch of sea salt to a blender and blend until smooth and creamy, transfer to a container with a lid and refrigerate for 1hr to thicken.
  3. 3.Add cashew yoghurt, filtered water, ice blocks, cumin and pepper to a blender and pulse until combined.
  4. 4.Garnish with mint or coriander (cilantro) and serve immediately.
