Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Cauliflower Cauliflower 1 head 1 head
  • Sun Dried Tomatoes Sun Dried Tomatoes 60g 1 cup
  • Roasted Bell Peppers Roasted Bell Peppers 2 2
  • Olive Oil Olive Oil 100ml 2/5 cup
  • Garlic Garlic 2 cloves 2 cloves
  • Nutritional Yeast Nutritional Yeast 2 tbsp 2 tbsp
  • Raw Cashew Nuts Raw Cashew Nuts 65g 1/2 cup
  • Lemon Lemon 1/2 1/2
  • Table Salt Table Salt pinch pinch

Instructions

  1. 1.Preheat oven to 200C.
  2. 2.Break cauliflower into small florets and place in a bowl.
  3. 3.Add remaining ingredients to a high speed blender and blend until smooth, adding 2-3 tbsp olive oil if necessary.
  4. 4.Pour pesto into the bowl with the florets and mix until florets are coated.
  5. 5.Add florets to a parchment paper lined baking sheet and bake for 30-35 minutes.
