Mango Passion Fruit and Walnut Tarts

Combining the tropical sweetness of mango, dates and passion fruit on a walnut and oat biscuit base, these summery tarts are a real treat! Quick to make and dairy free, our vegan mango tarts will brighten up any dinner party.

Dairy Free High Protein Under 30 mins

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Base:
  • Walnuts Walnuts 125g 1 cup
  • Rolled Oats Rolled Porridge Oats 90g 1 cup
  • Pitted Dates Pitted Dates 90g 1/2 cup
  • Water Water 4 tbsp 4 tbsp
  • Filling:
  • Mango Mango 1 1
  • Passion Fruit Passion Fruit 1 1
  • Walnuts Walnuts handful handful
  • Soy Yoghurt Soya Yoghurt 2 tbsp 2 tbsp

Instructions

  1. 1.*Timing tip: the tarts will need at least an hour (or overnight) to cool before serving.
  2. 2.First the base! Add the dates to a small bowl and add a litte hot water. Blend to create a paste. Place the base ingredients all in a food processor and pulse until you form a thick mixture.
  3. 3.Place mixture into 2 medium-size tart tins. Press down and up the sides.
  4. 4.Place in fridge for at least an hour or overnight if required.
  5. 5.Now the topping! Prepare the topping when ready to eat the tarts.
  6. 6.De-stone the mango and scoop out the flesh. Blend the mango until smooth with a little coconut milk.
  7. 7.Spoon the mango into your tart bases.
  8. 8.Add half of the mango to each tart, a spoonful of plant-based yoghurt, a sprinkling of passionfruit and the chopped walnuts.
  9. 9.Serve immediately. Enjoy!
