Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • All Purpose Flour Plain Flour 250g 2 cups
  • Baking Powder Baking Powder 2 tsp 2 tsp
  • Granulated Sugar Granulated Sugar 100g 1/2 cup
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Vegetable Oil Vegetable Oil 90ml 6 tbsp
  • Blueberries Blueberries 250g 1 & 2/3 cups
  • Lemon Lemon 1 1
  • Vegan Yogurt Vegan Yogurt 120g 1/2 cup
  • Soy Milk Soya Milk 70ml 5 tbsp

Instructions

  1. 1.Preheat your oven to 180?C.
  2. 2.Grease a 2lb loaf tin with vegetable oil and line with parchment baking paper.
  3. 3.Sift the flour, sugar, salt and baking powder into a large mixing bowl.
  4. 4.Wash and user a grater the peel to provide 2 teaspoons of lemon zest.
  5. 5.In another bowl mix the oil, lemon zest, juice of half a teaspoon, vegan yogurt and vegan milk, mix thoroughly.
  6. 6.Pour the liquid mixture into the dry mixture and stir lightly.
  7. 7. Stir in the blueberries.
  8. 8.Pour the mixture into the lined loaf tin.
  9. 9.Bake for 25 minutes, until a toothpick comes out clean.
  10. 10.Cool for 25-30 minutes before serving.
