This versatile vegan soup is a breeze to prepare and combines sauteed vegetables, hummus, and tahini with fresh herbs and spices. Low in carbs and dairy free it's a rich and creamy spiced hummus soup, perfect for a tasty lunch or healthy dinner.

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Hummus Hummus 3 tbsp 3 tbsp
  • Garlic Garlic 1 clove 1 clove
  • Shallot Shallot 2 2
  • Water Water 500ml 2 cups
  • Vegetable Stock Vegetable Stock 1 tbsp 1 tbsp
  • Ground Cumin Ground Cumin 1/2 tsp 1/2 tsp
  • Paprika Paprika 1/2 tsp 1/2 tsp
  • Tahini Tahini 1 tbsp 1 tbsp
  • Table Salt Table Salt pinch pinch
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Fresh Parsley Fresh Parsley 1 tbsp 1 tbsp

Instructions

  1. 1.Heat up a pot with olive oil and fry shallots and garlic until translucent.
  2. 2.Add spices, stir through for a few seconds and pour in the veggie stock.
  3. 3.Now add hummus and tahini, stir well until smooth and cook for 25-30 min on medium high heat.
  4. 4.Season with salt if desired and garnish with parsley.
