Gooseberry and Rooibos Ice Pops

Hot outside? Then why not try out these ice pops made from fresh gooseberries, mint, lemon and rooibos tea!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Filtered Water Filtered Water 750ml 3 cups
  • Rooibos Tea Rooibos Tea 4 teabags 4 teabags
  • Lemon Lemon 1/2 1/2
  • Mint Mint 10 Leaves 10 Leaves
  • Gooseberries Gooseberries 40g 1/4 cup
  • Raw Honey Raw Honey 3 tbsp 3 tbsp

Instructions

  1. 1.*Note: For best results prepare the day before serving*.
  2. 2.Heat filtered water in a pot until boiling and remove from heat.
  3. 3.Slice half of the lemon along the width into thin slices.
  4. 4.Place tea bags, lemon, mint leaves, gooseberries and honey in the pot and allow to steep for 15min.
  5. 5.Remove the tea bags, lemon slices and mint leaves, and slightly mash the gooseberries to release the juice.
  6. 6.Strain the iced tea through a sieve and allow to cool.
  7. 7.Slice gooseberries in half and add to iced tea before placing iced tea in the fridge to chill.

  9. 9.Once cooled, pour iced tea into ice pop moulds and freeze until solid (4 to 6hrs in the freezer, or according to manufacturers instructions if using an ice pop maker).
