Vegan Sausage and Mash

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Mashed Potato:
  • White Potatoes White Potatoes 2 Medium 2 Medium
  • Vegan Butter Vegan Butter 1 and 1/2 tbsp 1 & 1/2 tbsp
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Almond Milk Almond Milk 100ml 2/5 cup
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Gravy:
  • Yellow Onion Brown Onion 1 1
  • White Mushrooms White Mushrooms 150g 2 cups
  • Garlic Garlic 2 cloves 2 cloves
  • Dark Soy Sauce Dark Soy Sauce 1 tsp 1 tsp
  • Bouillon Vegetable Stock Bouillon Vegetable Stock 1 tsp 1 tsp
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Cornstarch Cornflour 1 tsp 1 tsp
  • Bay Leaves Bay Leaves 1 1
  • Vegan Sausages Vegan Sausages 4 4
  • Water Water 300ml 1 & 1/5 cups
  • Fresh Parsley Fresh Parsley handful handful

Instructions

  1. 1.Peel and quarter the potatoes and place them in a pot. Cover with at least an 3cm of boiling water. Add ½ teaspoon of salt and cook at medium heat until tender (around 15-20 minutes).
  2. 2.Remove the cooked potatoes from the pot and place them in a bowl with butter, milk, salt and pepper. Mash with a fork or potato masher.
  3. 3.Pan fry or oven cook the sausage until golden colour and set aside.
  4. 4.Heat the vegetable oil in a large, non-stick frying pan, add the minced garlic, fry for 2-3 minutes until the garlic turns slightly golden in colour.
  5. 5.Add chopped onion and sliced mushrooms and stir-fry for 3-5 minutes.
  6. 6.Add the bouillon, salt, bay leaf and dark soy sauce, mixing for another few minutes.
  7. 7.Pour over 300ml water, bring to a simmer then cover and cook for 10 minutes.
  8. 8.Mix the cornflour (cornstarch) with a tablespoon of warm water in a small bowl then pour it into the pan.
  9. 9.Stir and cook for another couple of minutes. The end result should be mince in very thick gravy.
  10. 10.Place the mash on your serving plates, add 2 sausages and pour the mushroom gravy on top.
  11. 11.Garnish with the parsley. Delicious when warm.
