Vegan Banoffee Parfait

Combining coconut cream, molasses, granola and banana, this sumptuous and stylish, vegan banoffee parfait dessert will wow your dinner guests!

Dairy Free High Protein Under 30 mins

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Unsweetened Soy Milk Unsweetened Soya Milk 250ml 1 cup
  • Lemon Juice Lemon Juice 1 tbsp 1 tbsp
  • Cornstarch Cornflour 1 tbsp 1 tbsp
  • Vanilla Extract Vanilla Extract 1/2 tsp 1/2 tsp
  • Molasses Molasses 1 tbsp 1 tbsp
  • Oat Granola Oat Granola 120g 1 cup
  • Banana Banana 1 1
  • Coconut Cream Coconut Cream 80g 1/3 cup

Instructions

  1. 1.Mix soy milk and lemon together in a medium mixing bowl and allow to curdle.
  2. 2.After 1min add corn flour and whisk until smooth.
  3. 3.Place in microwave on high for 60sec, remove and stir.
  4. 4.Microwave on high for an additional 60sec, remove and stir.
  5. 5.Add vanilla extract and molasses and microwave on high for 30sec, remove and stir, microwave for an additional 30sec, stir and allow to cool.
  6. 6.Transfer to container with a lid and refrigerate for at least 1hr.
  7. 7.Add each ingredient in layers in a glass, top with vegan yoghurt, whisked coconut cream, drizzle with molasses and enjoy!
