Spring Onion Pancakes (Cong You Bing)

Ingredients

  • Dough:
  • All Purpose Flour Plain Flour 200g 1 & 2/3 cups
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Water Water 150ml 3/5 cup
  • Filling:
  • Spring Onion Spring Onion 3 4
  • All Purpose Flour Plain Flour 1 tsp 1 tsp
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Sesame Oil Sesame Oil 1/2 tsp 1/2 tsp
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Ground Black Pepper Ground Black Pepper 1/4 tsp 1/4 tsp

Instructions

  1. 1.Dissolve the salt in 120ml of hot water.
  2. 2.Sift the flour into a large mixing bowl and slowly add the hot water, stirring all the time to mix well.
  3. 3.Add 40ml of cold water slowly and knead the dough for 5-6 minutes by hand, until it is smooth and elastic.
  4. 4.Roll the dough into a smooth ball shape, cover it with cling film or a kitchen towel, rest at room temperature for 30 minutes.
  5. 5.Meanwhile, fine chop the spring onion and mix all the insert ingredients in a small mixing bowl and set aside.
  6. 6.Sprinkle some flour onto a flat work surface, take the dough and knead it for about 2-3 minutes, divide it into 4 equal-sized parts.
  7. 7.Roll each part into a long thin piece, as thin as you can without tearing the dough apart, normally about 35-40 cm.
  8. 8.Spread about ΒΌ of the insert mixture on the thin dough and fold it into a strip. Coil the strip up into the shape of a snail.
  9. 9.Put the snail shaped dough in between layers of cling film and roll it out into a thin circle pancake (about 3-5mm thin).
  10. 10.Place one piece of pancake into a large, non-stick frying pan on high heat for 3-5 minutes, until you see a nice brown colour developing.
  11. 11.Flip over, heat for another 3-5 minutes, remove the pancake from the pan and repeat the same process for the rest of the pancakes.
  12. 12.Cool for 5-10 minutes. Cut the pancakes into quarters and serve with your preferred sauce (I normally mix chilli oil, sesame oil, light soy sauce and fresh chopped spring onion).
