Soba Noodles with Sesame Sauce

Served cold, these gluten free soba noodles with sesame sauce will give you an authentic Japanese experience! Prepared with fresh vegetables, peanuts and a chili dressing they‘re nutritious, totally vegan and simply delicious!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Noodles and sauce:
  • White Soba Noodles White Soba Noodles 120g 1 cup
  • Sesame Paste Sesame Paste 2 tbsp 2 tbsp
  • Light Soy Sauce Light Soy Sauce 1 and 1/2 tbsp 1 & 1/2 tbsp
  • Chili Oil Chilli Oil 1 tsp 1 tsp
  • Water Water 6 tbsp 6 tbsp
  • Topping:
  • Spring Onion Spring Onion 1 1
  • Cucumber Cucumber 1/2 1/2
  • Roasted Peanuts Roasted Peanuts 25g 1/6 cup
  • Sesame Seeds Sesame Seeds 1 tsp 1 tsp

Instructions

  1. 1.Boil the noodles in salted water. For timing follow the instructions on the noodle’s packaging.
  2. 2.Rinse the noodles with ice cold water and shake through a sieve to remove excess water, set aside.
  3. 3.Mix sesame paste, soy sauce, chilli oil and warm water in a small bowl, set aside. (Some sesame paste can be quite hard, press in with spoon to make sure sauce is smooth and creamy)
  4. 4.Place the chilled noodles in a serving bowl and drizzle the sesame sauce on top.
  5. 5.Top with shredded spring onions and shredded cucumber and garnish with crushed peanuts and sesame seeds.
