Ingredients

  • Large Vine Tomatoes Large Vine Tomatoes 4 4
  • Red Onion Red Onion 1 1
  • Bouillon Vegetable Stock Bouillon Vegetable Stock 2 tsp 2 tsp
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Tomato Puree Tomato Puree 2 tbsp 2 tbsp
  • Fresh Basil Fresh Basil handful handful
  • Young Watercress Young Watercress handful handful
  • Water Water 800ml 3 cups

Instructions

  1. 1.Heat the olive oil in a pot and add diced red onion and tomatoes then stir-fry for 2-3 minutes.
  2. 2.Add the basil, salt, pepper and bouillon and stir-fry for another 2-3 minutes.
  3. 3.Pour on 800ml hot water and cook for 15 minutes at medium heat.
  4. 4.Blend the soup with a hand blender, sprinkle on some young watercress and serve.
