Ingredients

  • Mushrooms:
  • Shiitake Mushrooms Shiitake Mushrooms 150g 1 & 1/2 cups
  • Garlic Garlic 1 clove 1 clove
  • Olive Oil Olive Oil 1 tsp 1 tsp
  • Teriyaki Sauce Teriyaki Sauce 1/2 tsp 1/2 tsp
  • Light Soy Sauce Light Soy Sauce 1/2 tsp 1/2 tsp
  • Rice:
  • Microwave Brown Rice Microwave Brown Rice 300g 1 & 2/3 cups
  • Green Beans Green Beans 200g 1 & 3/5 cups
  • Beansprouts Beansprouts 150g 1 & 1/2 cups
  • Carrot Carrot 1 1
  • Sauce:
  • Sesame Oil Sesame Oil 1/2 tsp 1/2 tsp
  • Mirin Mirin 1 tbsp 1 tbsp
  • Teriyaki Sauce Teriyaki Sauce 1 tbsp 1 tbsp
  • Sesame Seeds Sesame Seeds 1 tbsp 1 tbsp
  • Light Soy Sauce Light Soy Sauce 2 tbsp 2 tbsp
  • Garlic Powder Garlic Powder 1/2 tsp 1/2 tsp
  • Spring Onion Spring Onion 1/2 1/2
  • Water Water 1 tbsp 1 tbsp
  • Fresh Cilantro Fresh Coriander Handful handful

Instructions

  1. 1.Heat the oil in a large, non-stick frying pan, add the minced garlic and fry for 2-3 minutes until the garlic turns slightly golden in colour.
  2. 2.Add the sliced shiitake mushrooms and stir fry for 2-3 minutes.
  3. 3.Pour in the soy and teriyaki sauce, simmer for a few minutes, or until slightly thickened, then place in a small bowl and set aside.
  4. 4.Heat the rice in the microwave.
  5. 5.Combine all sauce ingredients in a small bowl and mix well.
  6. 6.Place 150g rice in the middle of your serving bowl then place green beans, bean sprouts and carrot around it.
  7. 7.Place the teriyaki shiitake mushrooms in the middle.
  8. 8.Sprinkle the coriander on top and serve with the sauce.
