Scrambled Tofu with Avocado on Toast

Here we have a vegan reboot of the traditional scrambled egg and toast recipe. Spiced, peppery scrambled tofu and sliced avocado served on sourdough bread. Rich in protein and providing a healthy dose of the good unsaturated fats, this delicious vegan brunch will really hit the spot and keep hunger at bay for hours! It's completely dairy free and ready in just 15 minutes!

Ingredients

  • Firm Tofu Firm Tofu 400g 1 & 3/5 cups
  • Large Vine Tomatoes Large Vine Tomatoes 2 2
  • Avocado Avocado 1 1
  • Sourdough Bread Sourdough Bread 2 slices 2 slices
  • Ground Turmeric Ground Turmeric 1 tsp 1 tsp
  • Ground Cumin Ground Cumin 1 tsp 1 tsp
  • Sweet Smoked Paprika Sweet Smoked Paprika 1 tsp 1 tsp
  • Nutritional Yeast Nutritional Yeast 1 tsp 1 tsp
  • Kala Namak Salt Kala Namak Salt pinch pinch
  • Sea Salt Sea Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Rapeseed Oil Rapeseed Oil 1 tsp 1 tsp

Instructions

  1. 1.Drain the tofu and dry with a paper towel. Crumble the tofu with your hands into small pieces.
  2. 2.Place the tofu pieces into a bowl with the turmeric, cumin, sweet smoked paprika, nutritional yeast flakes, kala namak, salt, ground black pepper and mix together.
  3. 3.Heat the oil in a frying pan and add the tofu and spices. Heat on a medium heat for a few minutes while stirring to ensure even cooking.
  4. 4.While the tofu is cooking, place the sourdough in a toaster and toast to your liking.
  5. 5.Wash and slice the tomatoes.
  6. 6.When the toast is ready and the tofu heated through, add both to 2 plates with the avocado slices and tomato. Enjoy!
