Ingredients

  • Yellow Onion Brown Onion 1 1
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Garlic Garlic 2 cloves 2 cloves
  • Red Chilies Red Chillies 2 2
  • Ginger Root Ginger Root 1 tsp 1 tsp
  • Ground Cumin Ground Cumin 1 tsp 1 tsp
  • Mustard Seeds Mustard Seeds 1 tsp 1 tsp
  • Cinnamon Sticks Cinnamon Sticks 1 1
  • Ground Turmeric Ground Turmeric 1/2 tsp 1/2 tsp
  • White Potatoes White Potatoes 4 4
  • Water Water 125ml 1/2 cup
  • Fresh Spinach Fresh Spinach 300g 10 cups

Instructions

  1. 1.Peel and mince garlic and ginger, mince chillies, dice onion, peel potatoes and cut into bite size pieces.
  2. 2.Heat olive oil in a pan over medium heat.
  3. 3.Add onion and cook until soft and translucent.
  4. 4. Add cumin, mustard seeds and cinnamon and stir until mustard seeds start to pop.
  5. 5.Add turmeric and stir to combine.
  6. 6.Add potatoes, garlic, chilli and ginger and stir to combine.
  7. 7.Add water, cover and cook for 15min or until potatoes are soft, stirring occassionally.
  8. 8.Add spinach and cook until water has evaporated and spinach is wilted.
  9. 9.Serve immediately as is or with flatbread/rice.
