Oven roasted, seasoned white and sweet potatoes with a fragrant herb and yogurt sauce. Delicious!

Ingredients

  • Roast:
  • Sweet Potato Sweet Potato 2 2
  • White Potatoes White Potatoes 2 2
  • Red Onion Red Onion 2 2
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Yoghurt Sauce:
  • Vegan Yogurt Vegan Yogurt 3 tbsp 3 tbsp
  • Sriracha Chili Sauce Sriracha Chilli Sauce 2 tsp 2 tsp
  • Herb Sauce:
  • Fresh Cilantro Fresh Coriander 20g 1/2 cup
  • Garlic Garlic 3 cloves 3 cloves
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Ground Black Pepper Ground Black Pepper 1/4 tsp 1/4 tsp

Instructions

  1. 1.Preheat the oven to 170?C.
  2. 2.Chop the sweet potato, potato and red onion into wedges. Add to a large bowl and mix all the roast ingredients.
  3. 3.Place the wedges onto a baking tray lined with tin foil.
  4. 4.Bake for 15 minutes, then flip and bake for other 15 minutes.
  5. 5.Meanwhile, combine vegan yogurt and sriracha chilli sauce in a small bowl and mix well, set aside.
  6. 6.Place all coriander (cilantro) sauce ingredients into a small food processor and blend for 60 seconds, set aside.
  7. 7.Remove the roasted potatoes and onions from the oven, place them on a serving plate and sprinkle the yogurt and coriander sauce on top. Delicious when warm.
