Peanut Butter Jelly Pudding

Heavenly sweet, this delightful peanut butter jelly pudding is so easy to make. Topped with chia seeds and blueberries it's a rewarding little dessert and ready in just 10 minutes!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Almond Milk Almond Milk 375ml 1 & 1/2 cups
  • Chia Seeds Chia Seeds 45g 1/4 cup
  • Peanut Butter Peanut Butter 1 tbsp 1 tbsp
  • Set Honey Set Honey 1 tsp 1 tsp
  • Vanilla Extract Vanilla Extract 1/2 tsp 1/2 tsp
  • Blueberry Jam Blueberry Jam 80g 1/4 cup
  • Blueberries Blueberries 40g 1/4 cup

Instructions

  1. 1.*For best results, prepare this recipe at least 4 hours before serving.*
  2. 2.Note: This pudding was made with my blueberry chia jam (check that recipe!) but you can also use regular blueberry jam.
  3. 3.Place milk, chia seeds, peanut butter, honey and vanilla extract in a blender and pulse until combined.
  4. 4.Layer blueberry chia jam and peanut butter mixture in two jars with lids and refrigerate for 1 to 4 hours, preferably overnight.
  5. 5.Serve with peanut butter, extra almond milk and fresh blueberries.
