Pan Fried Tofu and Vegetables

Mix the tangy flavors of bell peppers with cherry tomatoes and tofu for this quick and tasty vegan dish.

Ingredients

  • Tofu Tofu 300g 1 & 1/5 cup
  • Yellow Bell Pepper Yellow Bell Pepper 1 1
  • Red Bell Pepper Red Bell Pepper 1 1
  • Cherry Tomatoes Cherry Tomatoes 200g 1 & 1/3 cups
  • Capers Capers 1 tbsp 1 tbsp
  • Paprika Paprika 2 tsp 2 tsp
  • Dried Oregano Dried Oregano 2 tsp 2 tsp
  • Dried Parsley Dried Parsley 2 tsp 2 tsp
  • Table Salt Table Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch

Instructions

  1. 1.In a large frying pan pour the extra-virgin olive oil, paprika, and oregano and cook over low heat.
  2. 2.Slice tofu into cubes and, when the oil is hot, sauté in the pan for 5 minutes with a pinch of salt.
  3. 3.Dice peppers and add to tofu with a dash of pepper and cook for 10min.
  4. 4.Slice tomatoes into quarters and add to pan with capers.
  5. 5.Sauté, allowing it all to flavor for 5min on medium-high heat.
  6. 6.Sprinkle with fresh parsley and serve.
