Nutty Spinach and Basil Pasta

Combine fresh spinach, roasted pine nuts and pasta in a delicious lemon sauce for this high protein dish. Pure bliss with every mouthful!

Ingredients

  • Penne Pasta Penne Pasta 175g 7/8 cup
  • Fresh Spinach Fresh Spinach 200g 7 cups
  • Fresh Basil Fresh Basil 15g 1/2 cup
  • Garlic Garlic 2 cloves 2 cloves
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Lemon Juice Lemon Juice 1 tbsp 1 tbsp
  • Nutritional Yeast Nutritional Yeast 2 tbsp 2 tbsp
  • Table Salt Table Salt 1 tsp 1 tsp
  • Ground Black Pepper Ground Black Pepper 1/4 tsp 1/4 tsp
  • Roasted Pine Nuts Roasted Pine Nuts 20g 2.5 tbsp

Instructions

  1. 1.Boil the penne in salted water. For timing follow the instructions on the pasta packaging.
  2. 2.Rinse the penne with ice-cold water and shake through a sieve to remove excess water, set aside.
  3. 3.Heat the oil in a large, non-stick frying pan, add the minced garlic and fry for 2-3 minutes until the garlic turns slightly golden in colour.
  4. 4.Add the chopped spinach and cook for another 3 minutes, stirring frequently.
  5. 5.Drop in the penne and finely chopped basil and season with salt, nutritional yeast, pepper and lemon juice, stir well and cook for a further 2 minutes.
  6. 6.Sprinkle with the pine nuts and toss in the pan until well combined.
  7. 7.Taste and add additional seasoning if needed.
  8. 8.Remove from the heat and serve immediately.
