Fun and quick to make with just seven ingredients, these vegan coconut balls made from shredded coconut, coconut butter and cinnamon are pure bliss!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Shredded Coconut Desiccated Coconut 200g 2 cups
  • Coconut Butter Coconut Butter 2 tbsp 2 tbsp
  • Maple Syrup Maple Syrup 2 tbsp 2 tbsp
  • Coconut Milk Coconut Milk 50ml 3.5 tbsp
  • Vanilla Extract Vanilla Extract 1 tsp 1 tsp
  • Ground Cinnamon Ground Cinnamon 1/2 tsp 1/2 tsp
  • Sea Salt Sea Salt 1/4 tsp 1/4 tsp

Instructions

  1. 1.Put 50g of the desiccated coconut to one side and then place the rest in a small food processor with all the other ingredients, blend for 2-3 minutes until the mixture resembles a thick paste.
  2. 2.Scoop out approximately 2 tablespoons of the paste and roll into a 2-3 cm ball.
  3. 3.Roll the ball gently in the remaining desiccated coconut until well coated.
  4. 4.Repeat this process until all the paste has been used. You should get around 12-15 balls.
  5. 5.Refrigerate for 1 hour and serve. Balls can be stored in the refrigerator for up to 5 days.
