Perfect for meal prep or packed lunches, this appetizing spinach salad combines apricot, chickpea, feta cheese and cilantro (coriander) with a tasty ginger and cinnamon olive dressing!

Ingredients

  • Chickpeas in Water Chickpeas in Water 200g 1 cup
  • Dried Apricots Dried Apricots 50g 1/4 cup
  • Baby Spinach Baby Spinach 30g 1 cup
  • Feta Cheese Feta Cheese 40g 1/4 cup
  • Fresh Cilantro Fresh Coriander 4 sprigs 4 sprigs
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Lemon Juice Lemon Juice 1 tbsp 1 tbsp
  • Ground Ginger Ground Ginger 1/2 tsp 1/2 tsp
  • Ground Cinnamon Ground Cinnamon 1/2 tsp 1/2 tsp
  • Ground Cumin Ground Cumin 1/2 tsp 1/2 tsp
  • Ground Cayenne Pepper Ground Cayenne Pepper 1/4 tsp 1/4 tsp
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Sea Salt Sea Salt pinch pinch

Instructions

  1. 1.Drain and rinse chickpeas.
  2. 2.Whisk together olive oil, lemon juice, ginger, cinnamon, cumin and cayenne pepper, black pepper and sea salt.
  3. 3.Pour the dressing into a glass jar with a lid.
  4. 4.Add remaining ingredients in layers, starting with the chickpeas, chopped apricots, baby spinach, feta and coriander (cilantro).
  5. 5.Garnish with nuts and seeds of choice (optional).
  6. 6.Shake jar and enjoy immediately, or refrigerate for up to three days.
