Ingredients

  • Mixed Salad Mixed Salad 100g 3 cups
  • Olive Oil Olive Oil 2 tbsp 2 tbsp

  • Fresh Cilantro Fresh Coriander 10g handful
  • Pitted Black Olives Pitted Black Olives 50g 1/3 cup
  • Corn Kernels in Water Sweetcorn in Water 60g 1/3 cup

Instructions

  1. 1.Heat the oil in a large, non-stick frying pan, add the minced garlic and fry for 2-3 minutes until the garlic turns slightly golden in colour.
  2. 2.Add the thinly sliced onion, stir-fry for 2 minutes and then add the thinly sliced oyster mushrooms, green and red peppers and cook for another 3-5 minutes.
  3. 3.Season with salt, black pepper, cumin, paprika and chilli powder, cook and stir often until all the vegetables are softened, then place the vegetables in a warm serving bowl.
  4. 4.Warm tortillas in the microwave or oven.
  5. 5.Serve tortillas with the cooked vegetables, sliced avocado and freshly squeezed lime juice. Garnish with finely chopped coriander (cilantro), olives and sweet corn.
  6. 6.Note: Replace chili powder with another tablespoon of smoked paprika, if you don’t like a lot of spice. Any of your favourite green salad leaves, I like to use pea shoots or finely sliced lettuce.
