Matcha Green Tea Muffins

We infused Japanese matcha green tea powder with chocolate and almonds for this easy, vegan muffins recipe and are totally and utterly in love! Try it out in your free weekly meal planner!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • All Purpose Flour Plain Flour 250g 2 cups
  • Baking Powder Baking Powder 2 tsp 2 tsp
  • Matcha Powder Matcha Powder 2 tsp 2 tsp
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Coconut Milk Coconut Milk 200ml 4/5 cup
  • Caster Sugar Caster Sugar 80g 5 tbsp
  • Vegetable Oil Vegetable Oil 80ml 5 tbsp
  • Vanilla Extract Vanilla Extract 2 tsp 2 tsp
  • White Vinegar White Vinegar 1 tbsp 1 tbsp
  • Lemon Juice Lemon Juice 1 tsp 1 tsp
  • Dark Chocolate Dark Chocolate 20g 1/6 cup
  • Almond Flakes Almond Flakes 20g 1/4 cup
  • Toppings:
  • Dark Chocolate Dark Chocolate 30g 1/4 cup
  • Almond Flakes Almond Flakes 20g 1/4 cup

Instructions

  1. 1.*Note: The taste of Matcha Powder varies between brands. When adding to the recipe, add incremently, stir and taste test before adding more.*
  2. 2.Preheat an oven to 180°C.
  3. 3.Sift the flour, sugar, salt, baking powder and matcha powder into a large mixing bowl.
  4. 4.In another bowl; combine the oil, coconut milk, vanilla extract, white vinegar and lemon juice.
  5. 5. Pour the wet mixture into the dry mixture and gently stir.
  6. 6.Grease a 12-hole muffin tray with vegetable oil and place a paper muffin case in each hole.
  7. 7.Add the mixture equally to each muffin case and bake for 15 minutes.
  8. 8.Remove the muffins from the tray and allow to cool for a 15-20 minutes.
  9. 9.Top with melted dark chocolate and almond flakes before serving.
