Grilled Fennel with Lemon Juice

This fresh and punchy grilled fennel salad is an effortlessly simple side dish, healthy and filling too!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Fennel Fennel 2 bulbs 2 bulbs
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Lemon Lemon 1/2 1/2
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Fresh Parsley Fresh Parsley handful handful

Instructions

  1. 1.Preheat an oven to 180?C.
  2. 2.Slice the fennel into 5mm slices. Then in a large bowl, mix the sliced fennel with the olive oil, salt, 2 tablespoons of freshly squeezed lemon juice, ¾ of the parsley, a pinch of lemon zest and black pepper.
  3. 3.Place the slices onto a baking tray with parchment baking paper; avoiding overlapping.
  4. 4.Bake for 10 minutes, then flip and bake for other 7-8 minutes (watch closely for the last 5 minutes as they burn quite fast).
  5. 5.Garnish with the remaining parsley and serve.
