Ingredients

  • Organic Green Peas Pasta Organic Green Peas Pasta 320g 3 & 1/5 cups
  • Yellow Bell Pepper Yellow Bell Pepper 2.5 2.5
  • Cherry Tomatoes Cherry Tomatoes 100g 2/3 cup
  • Shallot Shallot 1 1
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 3 tsp 3 tsp
  • Table Salt Table Salt to taste to taste
  • Fresh Basil Fresh Basil handful handful

Instructions

  1. 1.Peel and chop the shallot into thin slices and let it gild in a large frying pan with the extra virgin olive oil.
  2. 2.Wash the peppers thoroughly, dry and then discard the stem and all the seeds along with the white fleshy parts. Then cut the pepper into slices and add to the frying pan along with the tomatoes (cut in half).
  3. 3.Let everything saute for 5 minutes on high heat then reduce the heat, add half a glass of water and let it cook gently for almost 15 minutes making sure nothing sticks to the bottom of the pan.
  4. 4.During the last 5 minutes, bring a large pot of salted water to a boil. Cook the green pea pasta accordingly to the package instruction (normally the time is much shorter than with wheat pasta).
  5. 5.When the pasta is cooked, drain and add into the pan, turn off the heat and mix in the pasta, in order to combine all the ingredients.
  6. 6.Serve warm with some fresh basil leaves on top.
