Gluten Free Vegan Pancakes

Oh yes, pancakes can be gluten-free, vegan, and yet so delicious you'll want to eat them for breakfast every morning!

Gluten Free Dairy Free Under 30 mins

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Buckwheat Flour Buckwheat Flour 100g 3/4 cup
  • Rice Flour Rice Flour 100g 3/4 cup
  • Caster Sugar Caster Sugar 30g 2 tbsp
  • Ground Cinnamon Ground Cinnamon 1/2 tsp 1/2 tsp
  • Baking Soda Bicarbonate of Soda 1 tsp 1 tsp
  • Rice Milk Rice Milk 300ml 1 & 1/5 cup
  • Apple Cider Vinegar Apple Cider Vinegar 2 tsp 2 tsp

Instructions

  1. 1.In a bowl sieve the dry ingredients and combine them.
  2. 2.Then pour all liquid ingredients and mix well (the apple vinegar comes at last) in order to obtain a fluid homogeneous batter. Set a pan over medium heat until it is warm enough, so spoon one pancakes' worth of the mixture into the pan.
  3. 3.When you see bubbles in the middle of the pancake, flip carefully and allow to cook less than one minute before taking it off and replacing with a new spoon of batter.
  4. 4.Repeat until the batter is gone, and - most difficult - try not to eat them while cooking.
