Ingredients

  • Green Olives Green Olives 140g 1 cup
  • Black Olives Black Olives 140g 1 cup
  • Olive Oil Olive Oil 125ml 1/2 cup
  • Sunflower Oil Sunflower Oil 125ml 1/2 cup
  • Orange Orange 1 1
  • Lemon Lemon 1 1
  • Garlic Garlic 4 cloves 4 cloves
  • Dried Oregano Dried Oregano 1 tbsp 1 tbsp
  • Thyme Thyme 3 sprigs 3 sprigs

Instructions

  1. 1.Peel and crush the garlic.
  2. 2.Peel the skin of an orange and lemon.
  3. 3.Place the green and black olives into a bowl and mix with the orange and lemon zests, crushed garlic, oregano and chopped thyme.
  4. 4.Put this mix inside a sealable glass jar and fill half with olive oil and half with sunflower oil.
  5. 5.Seal the jar and let marinate in a dark place for at least 2 days.
