Coconut Pitaya Chia Pudding

Dairy Free High Protein Under 30 mins

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Chia Seeds Chia Seeds 4 tbsp 4 tbsp
  • Coconut Milk Coconut Milk 250ml 1 cup
  • Almond Milk Almond Milk 250ml 1 cup
  • Vanilla Extract Vanilla Extract 1/2 tsp 1/2 tsp
  • Pitaya Powder Pitaya Powder 1 tsp 1 tsp
  • Agave Nectar Agave Nectar 1 tbsp 1 tbsp
  • Garnish:
  • Coconut Yoghurt Coconut Yoghurt 180g 3/4 cup
  • Blueberries Blueberries 40g 1/4 cup
  • Edible Flowers Edible Flowers small handful small handful

Instructions

  1. 1.*Timing tip: the puddings will need to cool for at least 6 hours, so bear that in mind!
  2. 2.Place all the ingredients in a jar with lid. Stir well making sure the chia seeds are well incorporated with the liquid.
  3. 3.Refrigerate overnight or at least for 6 hours.
  4. 4.Serve in small jars topped with coconut yogurt, blueberries and some pretty edible flowers!
