Classic Tomato Spaghetti with Basil

Ingredients

  • Spaghetti Pasta Spaghetti Pasta 200g 2 cups
  • Cherry Tomatoes Cherry Tomatoes 300g 2 cups
  • Yellow Onion Brown Onion 1 1
  • Garlic Garlic 1 clove 1 clove
  • Diced Tomatoes Chopped Tomatoes 250g 1 & 1/4 cups
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Balsamic Vinegar Balsamic Vinegar 1 tsp 1 tsp
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Fresh Basil Fresh Basil 10g 1/3 cup
  • Water Water 250ml 1 cup

Instructions

  1. 1.Boil the spaghetti in salted water. For cooking time follow the instructions on the pasta packaging.
  2. 2.Rinse the spaghetti with ice-cold water and shake through a sieve to remove excess water, set aside.
  3. 3.Heat the oil in a large, non-stick frying pan, add the minced garlic and fry for 2-3 minutes until the garlic turns slightly golden in colour.
  4. 4.Add the cherry tomatoes and onion and cook for 3 minutes, stirring frequently.
  5. 5.Pour on 250ml hot water and then add the vinegar and tinned tomatoes.
  6. 6.Cover with the lid, bring to the boil and reduce heat to medium, cook for 15 mins.
  7. 7.Season with salt, pepper and 2/3 of the basil, stir well and cook for another 3 minutes.
  8. 8.Drop in the spaghetti, stir well until the sauce covers all the pasta evenly.
  9. 9.Remove from heat and garnish with the remaining basil to serve.
