Cauliflower with Sesame Sauce

Cauliflower with a spicy sesame sauce is a traditional Israeli dish, perfect for a light meal or picnics!

Ingredients

  • Cauliflower Cauliflower 1 head 1 head
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Table Salt Table Salt 1 tbsp 1 tbsp
  • Ground Black Pepper Ground Black Pepper 1 tbsp 1 tbsp
  • Tahini Tahini 150g 2/3 cup
  • Water Water 100ml 2/5 cup
  • Lemon Lemon 1 1
  • Ground Cumin Ground Cumin 1 pinch 1 pinch
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Granulated Sugar Granulated Sugar 1 tsp 1 tsp
  • Fresh Parsley Fresh Parsley handful handful
  • Hot Paprika Hot Paprika 1 tsp 1 tsp

Instructions

  1. 1.Rinse the cauliflower well and place it into a casserole dish(one of those with a lid).
  2. 2.Spread olive oil, salt and pepper around the head and put into the oven (lowest shelf). Bake it for ¾ hour at 180 degrees celcius until „al dente“ soft. Depending on the size of the cauliflower, it might take 10 min more or less so check the progress after 35 min.
  3. 3.When soft take the cauliflower out of the oven and let it cool down while you prepare the sauce.
  4. 4.Add the tahina in a medium size bowl. Add the juice of a squeezed lemon and mix with water, salt and sugar. Add the water mix into the sesame while stirring fast with a whisker. The mix first gets weirdly hard but when it is all mixed together well it will be a rather white and creamy sauce.
  5. 5.Now add the cumin and paprika powder and stir the sauce until blended.
  6. 6.Now take the cauliflower and cut the the ´good parts´ of it into the sauce. Now take a big spoon and mix it carefully. You don’t want the cauliflower to be mashed but just covered well with the sauce.
  7. 7.When this is done sprinkle chopped parsley all over the cauliflower and serve it with Pita or Middle Eastern rice (see my recipe for middle eastern rice).
