Broccoli and Orange Leaf Salad

A vibrant fresh salad that combines mixed leafs with crunchy broccoli and sweet orange flavors!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Organic Spinach Organic Spinach 90g 3 cups
  • Lettuce Lettuce 200g 2 & 2/3 cups
  • Yellow Split Peas Yellow Split Peas 110g 1/2 cup
  • Carrot Carrot 1 1
  • Orange Orange 1 1
  • Broccoli Broccoli 1/2 head 1/2 head
  • Sunflower Oil Sunflower Oil 1 tbsp 1 tbsp
  • Table Salt Table Salt a pinch a pinch
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Sesame Seeds Sesame Seeds 4 tsp 4 tsp
  • Sunflower Seeds Sunflower Seeds 4 tbsp 4 tbsp

Instructions

  1. 1.*Pre-soak the split peas the night before.*
  2. 2.Add the split peas to a saucepan with water, bring to a boil, then reduce the heat and cook for approx. 20 minutes until they become soft.
  3. 3.Cut the florets from the broccoli and add to an oven tray. Season with the salt and oil, then cook in the oven (180°C) for 15 minutes. Once cooked, remove from the oven and set aside to cool down.
  4. 4.Wash and roughly chop the spinach and lettuce. Peel and grate the carrot. Peel and cut the orange.
  5. 5.In a large bowl, mix the broccoli, split peas, spinach, lettuce, carrot and orange gently with your hands. Then serve with a dash of olive oil, sesame seeds and sunflower seeds.
