Instructions

  1. 1.Note: Before you try to make this one, make sure you have already learned how to roll a normal sushi roll.
  2. 2.Cook sushi rice as per pack instructions.
  3. 3.Combine the sushi rice, sugar and rice vinegar together in a mixing bowl and allow to cool completely.
  4. 4.Cut the seaweed paper in half and set aside.
  5. 5.Place a layer of cling film on a bamboo mat to prevent the rice sticking.
  6. 6.Place the seaweed paper on top with the shiny side down.
  7. 7.Wet your hand or a spoon, add 100g sushi rice and spread equally, pressing gently on the seaweed paper.
  8. 8.Place the rice and seaweed sheet upside down on the cling film (Rice face down and seaweed paper face up).
  9. 9.Place sliced vegetables on top of the seaweed paper.
  10. 10.Roll the sushi with the bamboo mat, gently pressing the roll into square shape as you do so. Repeat the same process on your second maki roll, so that you have two rolls with rice on the outside.
  11. 11.Cut an avocado into half, remove the stone and scoop out the flesh from the skin carefully.
  12. 12. Place the half avocado on the chopping board and make slices every 2-3mm with the tip of your knife, keeping it in the original half avocado shape.
  13. 13.With your hand, gently pushs the avocado slices onto their sides and spread out little so that each slice overlaps slightly.
  14. 14.Open the cling film on the maki rolls and place the avocado slices on top, then re-cover with cling film and use the bamboo mat to press the avocado slices onto the rolls.
  15. 15.Slice the rolls in to 8 pieces of sushi, serve with soy sauce and wasabi.
