Avocado Bread with Coconut Glaze

A sweet and moist homemade bread infused with avocado and served with a fingerlicking coconut oil glaze.

  • All Purpose Flour Plain Flour 130g 1 cup
  • Baking Powder Baking Powder 1/2 tsp 1/2 tsp
  • Baking Soda Bicarbonate of Soda 1/2 tsp 1/2 tsp
  • Ground Cinnamon Ground Cinnamon 1/4 tsp 1/4 tsp
  • Ground Nutmeg Ground Nutmeg 1/8 tsp 1/8 tsp
  • Table Salt Table Salt pinch pinch
  • Coconut Oil Coconut Oil 60ml 1/4 cup
  • Brown Sugar Brown Sugar 100g 1/2 cup
  • Avocado Avocado 1 1
  • Vanilla Extract Vanilla Extract 1/2 tsp 1/2 tsp
  • Organic Eggs Organic Eggs 1 1
  • Lime Juice Lime Juice 1 tbsp 1 tbsp
  • Topping:
  • Coconut Oil Coconut Oil 60ml 1/4 cup
  • Powdered Sugar Icing Sugar 120g 1 cup
  • Coconut Milk Coconut Milk 2 tbsp 2 tbsp
  • Vanilla Extract Vanilla Extract 1 tsp 1 tsp


  1. 1.Preheat oven to 180c and lighlty oil a loaf pan.
  2. 2.Whisk together dry ingredients in a large bowl.
  3. 3.Place coconut oil, sugar, egg and vanilla extract in a medium sized bowl and mix until combined.
  4. 4.Add mashed avocado and lime juice and gently fold into the flour mix until just combined.
  5. 5.Spoon mixture into loaf pan and bake for 45min or until a wooden toothpick comes out clean.
  6. 6.Set aside and cool completely.
  7. 7.Cream softened coconut oil until smooth, add 1/4 cup powdered sugar, vanilla extract and 2 tbsp coconut milk and mix together until smooth. Adjust as necessary by adding more powdered sugar and/or milk as needed until well combined. Pour glaze over cooled cake and set aside for 10min.
  8. 8.Slice and enjoy!
