Apple Cinnamon Vegan Pancakes

Nothing beats some light and fluffy homemade pancakes for breakfast. And these apple and cinnamon oat pancakes are irresistibly good! Ready in just 20 minutes and dairy free, why not treat yourself and add these delicious vegan pancakes to your meal plan this week!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Spelt Flour Spelt Flour 200g 1 & 2/3 cup
  • Cane Sugar Cane Sugar 30g 2 tbsp
  • Ground Cinnamon Ground Cinnamon 1/4 tsp 1/4 tsp
  • Baking Soda Bicarbonate of Soda 1/2 tsp 1/2 tsp
  • Chia Seeds Chia Seeds 1 tbsp 1 tbsp
  • Oat Milk Oat Milk 300ml 1 & 1/5 cups
  • Apple Apple 1 1
  • Apple Cider Vinegar Apple Cider Vinegar 1 tsp 1 tsp

Instructions

  1. 1.Grate the apple. In a bowl sieve the dry ingredients and mix them through.
  2. 2.Add all liquid ingredients (adding the cider vinegar last) along with the grated apple and mix well – until you have a fluid homogeneous slightly thick batter.
  3. 3.Set a pan over medium heat until it is warm, then pour one scoop of batter at a time (or more if your pan is big enough).
  4. 4.When you see bubbles in the middle of the pancake, flip carefully and cook on the other side. Repeat until you have used all the batter.
  5. 5.Serve with your Grandma's jam, coconut yogurt, or your favourite pancake toppings.
