Combine lentils with yellow beets, cherry tomatoes, onion and lettuce for this delicious spicy salad!

- Red Lentils Red Lentils 400g 2 cups
 - Lettuce Lettuce 1 head 1 head
 - Cherry Tomatoes Cherry Tomatoes 150g 1 cup
 - Raw Yellow Beet Raw Yellow Beetroot 1 1
 - Red Onion Red Onion 1 1
 - Mint Mint handful handful
 - Red Chili Flakes Crushed Chillies 1 and 1/2 tsp 1 & 1/2 tsp
 - Lime Lime 1 1
 
Instructions
- 1.Wash and boil the lentils as per package instructions.
 - 2.Peel and boil the beetroot till it softens.
 - 3.Wash and chop the lettuce.
 - 4.Cut the tomatoes in quarters. Cut the onion into thin slices. Chop the mint.
 - 5.Mix everything gently with your hands; add the lime juice and the chilli flakes.
