Veggie Patty with Carrot Salad

Combine rolled oats, lupin beans, carrots and onion for these healthy, low fat veggie patties. Served with a lettuce salad and yogurt dip!

  • Rolled Oats Rolled Porridge Oats 120g 1 & 1/3 cups
  • Lupin Beans Lupin Beans 120g 3/4 cup
  • Carrot Carrot 3 3
  • Spring Onion Spring Onion 4 4
  • Vegetable Stock Vegetable Stock 2 tbsp 2 tbsp
  • Table Salt Table Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Sweet Paprika Sweet Paprika 1 tbsp 1 tbsp
  • Water Water 400ml 1 & 3/5 cups
  • Natural Yoghurt Natural Yoghurt 150g 3/5 cup
  • Lemon Lemon 1/2 1/2
  • Romaine Lettuce Romaine Lettuce 60g 1 cup

Instructions

  1. 1.Peel and dice the onion, then brown in oil over medium-high heat.
  2. 2.Peel and grate carrots.
  3. 3.Add onions and carrots to the lupin, oatflakes, vegetable stock and mix.
  4. 4.Add 250ml warm water and mix well until it forms a thick mass.
  5. 5.Take one handful at a time and form into balls, then gently press flat.
  6. 6.Heat oil in a pan and brown the veggie patties on each side.
  7. 7.Combine lemon juice and yoghurt, add a pinch of salt and pinch of pepper.
  8. 8.Serve patty with yoghurt dip.
