Roasted Beetroot and Orange Salad

Sweet and tangy at the same time, this salad mixes roasted beet (beetroot), refreshing orange and arugula (rocket salad) with pine nuts and feta. A wonderfully simple and healthy lunch or light dinner option!

Ingredients

  • Beet Beetroot 2 2
  • Feta Cheese Feta Cheese 50g 1/2 cup
  • Orange Orange 1 1
  • Pine Nuts Pine Nuts 15g 1 tbsp
  • Arugula Salad Rocket Salad 100g 2 & 1/2 cups
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Table Salt Table Salt seasoning seasoning
  • Ground Black Pepper Ground Black Pepper seasoning seasoning

Instructions

  1. 1.Peel the beetroot and cut into small chunks. Add to a shallow baking tray, mix with some olive oil and salt. Place into the oven, heat set to 180C/Gas 5.
  2. 2.Peel the orange and then remove the pith with a sharp knife. Cut the feta into cubes. Wash the salad.
  3. 3.Once the beetroot is cooked, mix all ingredients, add some pine nuts, season and serve.
