Red Pepper and Feta Toast

A lightly baked open sandwich topped with feta and gouda cheese, fresh pepper, onion and tomatoes. A tasty lunchtime sandwich, high in protein and full of flavor!

Ingredients

  • Chilli Bread Roll Chilli Bread Roll 2 2
  • Feta Cheese Feta Cheese 150g 1 cup
  • Red Bell Pepper Red Bell Pepper 1 1
  • Red Onion Red Onion 1 1
  • Cherry Tomatoes Cherry Tomatoes 5 5
  • Romaine Lettuce Romaine Lettuce 4 leaves 4 leaves
  • Dried Oregano Dried Oregano pinch pinch
  • Table Salt Table Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Lemon Lemon 1/2 1/2
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tbsp 1 tbsp
  • Goat Gouda Cheese Goat Gouda Cheese 1 slice 1 slice

Instructions

  1. 1.Preheat oven to 200c.
  2. 2.Place chilli bread in oven for 5 minutes.
  3. 3.Cut feta cheese into small pieces, add lemon juice and mash with a fork.
  4. 4.Remove bread from oven and cut in half.
  5. 5.Drizzle olive oil over the bread then spread the smashed feta on it.
  6. 6.Slice red pepper and cut cherry tomatoes in half, chop onion, add to bread, drizzle with lemon juice and season to taste.
  7. 7.Add salad leaves, top with goat gouda and cover with leftover bread.
