Radicchio Peach Salad with Almonds

Easy and quick, this peach salad with radicchio, arugula (rocket), parmesan and almonds is a tasty salad - perfect for light lunches or buffets.

Ingredients

  • Radicchio Radicchio 1/2 a head 1/2 a head
  • Wild Arugula Salad Wild Rocket Salad 200g 9 cups
  • Peach Peach 2 2
  • Almonds Almonds 100g 2/3 cup
  • Parmesan Cheese Parmesan Cheese 4 tbsp 4 tbsp
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 6 tbsp 6 tbsp
  • Balsamic Vinegar Balsamic Vinegar 2 tbsp 2 tbsp
  • Table Salt Table Salt 2 pinches 2 pinches

Instructions

  1. 1.Toast the peeled almonds in a pan on a high heat for 2 minutes, until they get a little colour. Let them cool off, then chop them roughly.
  2. 2.Wash the radicchio and wild rocket (arugula), dry them well and chop the radicchio into bite-sized-pieces.
  3. 3.Peel the peaches and cut them into bite-sized-pieces.
  4. 4.In a small jar, put the salt, vinegar and oil and shake it vigorously: a perfect salad dressing will be ready.
  5. 5.Plate the salad, spread with the shaved Parmesan and dress it thoroughly with the emulsion prepared earlier.
