Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Basmati Rice Basmati Rice 300g 1 & 2/3 cups
  • Provolone Cheese Provolone Cheese 200g 2 cups
  • Pistachios Nuts Pistachios Nuts 150g 1 & 1/2 cups
  • Carrot Carrot 3 3
  • Cucumber Cucumber 1 1
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp
  • Balsamic Vinegar Balsamic Vinegar to taste to taste
  • Table Salt Table Salt to taste to taste

Instructions

  1. 1.Cook the rice according to package instructions (approx. 15-20 minutes, include salt in the cooking water).
  2. 2.Meanwhile, slice the cucumber and discard its watery core containing its seeds.
  3. 3.Peel the carrot. Chop the carrots, cheese, and unsalted pistachios into small cubes.
  4. 4.Once the rice is cooked, spread the rice out on a large baking sheet pan and let cool for 10 minutes, or until room temperature. Place in a large serving bowl.
  5. 5.Add all the other ingredients plus the extra virgin olive oil and some balsamic vinegar if you like. Toss to combine and serve.
