Straight from the streets of Mexico, this spicy and flavorful tomato salsa is ready in minutes. The combo with tortilla chips makes for an easy yet irresistible appetizer or side dish!

Ingredients

  • Large Vine Tomatoes Large Vine Tomatoes 2 2
  • Red Onion Red Onion 1 1
  • Fresh Cilantro Fresh Coriander 10g handful
  • Jalapeno Jalapeno 1 1
  • Garlic Garlic 1 clove 1
  • Lime Juice Lime Juice 2 tbsp 2 tbsp
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Ground Black Pepper Ground Black Pepper 1/4 tsp 1/4 tsp
  • Ground Cumin Ground Cumin 1/4 tsp 1/4 tsp
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tbsp 1 tbsp

Instructions

  1. 1.Remove seeds and roughly chop the tomatoes.
  2. 2.Roughly chop the onion and coriander (cilantro).
  3. 3.Place all the ingredients in a small food processor for 10-30 seconds until blended into fine pieces (don’t blend for too long, you still want small pieces, not a paste).
  4. 4.Refrigerate for 30 mins for the best flavour.
