Mediterranean Loaded Butternut Fries

Ingredients

  • Butternut Butternut 1 1
  • Greek Yoghurt Greek Yoghurt 2 tbsp 2 tbsp
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Dijon Mustard Dijon Mustard 1 tbsp 1 tbsp
  • Red Wine Vinegar Red Wine Vinegar 1 tbsp 1 tbsp
  • Dried Oregano Dried Oregano 1/4 tsp 1/4 tsp
  • Dried Basil Dried Basil 1/4 tsp 1/4 tsp
  • Garlic Garlic 1 clove 1 clove
  • Cucumber Cucumber 1 1
  • Sun Dried Tomatoes Sun Dried Tomatoes 15g 1/4 cup
  • Black Olives Black Olives 30g 1/4 cup
  • Spring Onion Spring Onion 1 1
  • Kale Kale 35g 1/2 cup
  • Vegan Feta Cheese Vegan Feta Cheese 150g 1 cup
  • Sea Salt Sea Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Red Chili Flakes Crushed Chillies 1/4 tsp 1/4 tsp

Instructions

  1. 1.Preheat oven to 220c.
  2. 2.Wash and cut butternut into fries, toss with olive oil, and sprinkle with salt and pepper.
  3. 3.Place on a baking tray and bake for 30min, or until crispy, turning halfway through.
  4. 4.While fries are baking, roughly chop cucumber, sundried tomato, olives and spring onion, combine in a bowl and set aside.
  5. 5.Combine Greek yoghurt, olive oil, Dijon mustard, red wine vinegar, oregano, basil and garlic in a blender and blend until smooth.
  6. 6.Assemble ingredients in layers: fries, salad, dressing.
  7. 7.Season to taste and serve immediately.
