Mediterranean Garlic and Olive Pasta

So easy and quick to rustle up, this naked spaghetti dish is full of flavor, topped with black olives, garlic, fresh parsley and feta cheese!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Spaghetti Pasta Spaghetti Pasta 500g 3 & 1/2 cups
  • Garlic Garlic 1 clove 1 clove
  • Olive Oil Olive Oil 60ml 1/4 cup
  • Lemon Lemon 1/2 1/2
  • Black Olives Black Olives 40g 1/3 cup
  • Sun Dried Tomatoes Sun Dried Tomatoes 30g 1/2 cup
  • Fresh Parsley Fresh Parsley 2 tbsp 2 tbsp
  • Feta Cheese Feta Cheese 75g 1/2 cup

Instructions

  1. 1.Cook spaghetti according to packet instructions.
  2. 2.Add olive oil and roughly chopped garlic to pan, reduce to simmer and cook the garlic over low heat for 15min, discard garlic and turn heat off.
  3. 3.Halve and pit the olives and add to the spaghetti with freshly squeezed lemon juice and sun dried tomatoes. Toss to combine.
  4. 4.Garnish with crumbled feta and parsley and serve.
