Served with lettuce, a flavorful chickpea salad, salad dressing and feta cheese, these Greek-inspired sweet potato fries are a fingerlicking party snack or appetizer!

Ingredients

  • Sweet Potato Sweet Potato 2 2

  • Ground Black Pepper Ground Black Pepper 1/4 tsp 1/4 tsp
  • Chickpeas in Water Chickpeas in Water 400g 2 cups
  • Cherry Tomatoes Cherry Tomatoes 200g 1 & 2/3 cups
  • Spring Onion Spring Onion 1 1
  • Black Olives Black Olives 45g 1/3 cup
  • Fresh Parsley Fresh Parsley small handful 1/4 cup
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Lemon Juice Lemon Juice 1 tbsp 1 tbsp

  • Dijon Mustard Dijon Mustard 2 tsp 2 tsp
  • Greek Yoghurt Greek Yoghurt 125g 1/2 cup
  • Dried Oregano Dried Oregano 1 tsp 1 tsp
  • Lettuce Lettuce 200g 3 cups
  • Feta Cheese Feta Cheese 150g 1 cup
  • Red Chili Flakes Crushed Chillies 1/4 tsp 1/4 tsp

Instructions

  1. 1.Preheat oven to 220c.
  2. 2.Wash and cut sweet potatoes into fries, toss with olive oil, and sprinkle with salt and pepper.
  3. 3.Place on a baking tray and bake for 30min or until lightly browned and crispy, turning halfway through.
  4. 4.While fries are baking, toss chickpeas, sliced cherry tomatoes, chopped spring onion, olives, chopped parsley, 1 tbsp olive oil, 1 tbsp lemon juice and a pinch of salt and pepper in a small bowl and set aside to marinade.
  5. 5.Combine 2 tbsp olive oil, 2 tbsp red wine vinegar, 1 clove garlic, 2 tsp Dijon mustard, 1/2 cup of Greek yoghurt and 1 tsp oregano in a blender and blend until smooth.
  6. 6.Assemble ingredients in layers: fries, lettuce, chickpea salad, salad dressing and feta cheese.
  7. 7.Season to taste and serve immediately.
