  • Yellow Onion Brown Onion 2 2
  • Carrot Carrot 2 2
  • Celery Celery 2 2
  • Garlic Garlic 1 clove 1 clove
  • Bay Leaves Bay Leaves 2 2
  • Fresh Parsley Fresh Parsley 15g 1/2 cup
  • Diced Tomatoes Chopped Tomatoes 400g 2 cups
  • Table Salt Table Salt 1 tsp 1 tsp
  • Dried Oregano Dried Oregano 1/2 tsp 1/2 tsp
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Water Water 500ml 2 cups

Instructions

  1. 1.Dice vegetabled and place in a large soup pot, top with garlic, bay leaves, 2/3 chopped parsley, tinned tomatoes and dried oregano.
  2. 2.Pour in 500ml hot water and olive oil, cover with the lid and turn the heat to medium. Allow to simmer until the vegetables are tender, stirring frequently, for about 30 minutes.
  3. 3.Season the soup with black pepper and salt, cook for another 5 minutes.
  4. 4.Sprinkle on parsley and serve warm.
