Ingredients

  • Yellow Onion Brown Onion 1 1
  • Garlic Garlic 1 clove 1 clove
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Mustard Seeds Mustard Seeds 1 tsp 1 tsp
  • Cilantro Seeds Coriander Seeds 1 tsp 1 tsp
  • Ground Cumin Ground Cumin 1/2 tsp 1/2 tsp
  • Ground Cloves Ground Cloves 1/8 tsp 1/8 tsp
  • Ground Turmeric Ground Turmeric 1/8 tsp 1/8 tsp
  • Red Chili Flakes Crushed Chillies 1/2 tsp 1/2 tsp
  • Bay Leaves Bay Leaves 2 2
  • Brown Sugar Brown Sugar 1 tbsp 1 tbsp
  • Coconut Milk Light Coconut Milk Light 60ml 1/4 cup
  • Water Water 580ml 2 & 1/3 cup
  • Long Grain Rice Long Grain Rice 180g 1 cup

Instructions

  1. 1.Slice onions, and cut apples into eigths and remove seeds.
  2. 2.Add onion and garlic to a non-stick pan over medium heat and sautee until onions start to soften.
  3. 3.Add bay leaves, spices and chilli flakes and stir to incorporate.
  4. 4.Add apple slices, sugar and salt and coat apples with spices. Cook for 10min, uncovered.
  5. 5.Add 1/3 cup water and coconut milk, stir well and cook for 10min, covered.
  6. 6.Meanwhile, cook rice according to package instructions.
  7. 7.Divide rice and curry between two bowls and serve immediately.
  8. 8.Spices can be halved for a milder curry taste.
