Fig and Pesto Couscous Salad

Fragrant and flavorful, this colorful salad combines creamy pesto couscous with fig, yellow tomato and dill.

Ingredients

  • Couscous Couscous 320g 2 cups
  • Water Water 500ml 2 cups
  • Green Pesto Green Pesto 250g 1 cup
  • Yellow Tomatoes Yellow Tomatoes 2 2
  • Red Onion Red Onion 1 1
  • Figs Figs 2 2
  • Sesame Seeds Sesame Seeds 2 tbsp 2 tbsp
  • Dill Dill bunch bunch

Instructions

  1. 1.Boil the water. Pour the couscous into a pan and then add the boil water. Cover the pan with a tea towel and let it rest for 10 minutes.
  2. 2.Then remove the tea towel, and spoon the cooked couscous into a mixing bowl.
  3. 3.Add the pesto and mix gently with your hands. Once thoroughly mixed, transfer to a large plate.
  4. 4.Dice the tomatoes into small cubes and discard the seeds.
  5. 5.Cut the figs into slices and chop the onion into small cubes.
  6. 6.Now top the pesto couscous with these ingredients, garnish with some chopped dill and sesame seeds.
