Ingredients

  • Lentils Lentils 200g 1 cup
  • Coconut Milk Light Coconut Milk Light 375ml 1 & 1/2 cups
  • Diced Tomatoes Chopped Tomatoes 400g 2 cups
  • Water Water 250ml 1 cup
  • Fresh Cilantro Fresh Coriander 25g 1/2 cup
  • Garlic Garlic 2 cloves 2 cloves
  • Olive Oil Olive Oil 2 tbsp 2 tbsp
  • Ground Cumin Ground Cumin 1 tsp 1 tsp
  • Ground Cilantro Ground Coriander 1 tsp 1 tsp
  • Ground Turmeric Ground Turmeric 1 tsp 1 tsp
  • Sea Salt Sea Salt 1 tsp 1 tsp
  • Ginger Root Ginger Root 2cm coin 2cm

Instructions

  1. 1.Heat oil in a large pot over medium heat.
  2. 2.Add ground spices and toast for a minute.
  3. 3.Add garlic and cook, stirring, for 3min.
  4. 4.Add tomatoes, lentils, water and bring to boil.
  5. 5.Reduce heat and simmer for 20min.
  6. 6.Stir in coconut milk and coriander (cilantro).
  7. 7.Serve with white rice, garnished with fresh coriander and chilli flakes.
